Rare lobster specialties, fine seafood and an extensive regional wine list.

Regent Hotels & Resorts proudly announces the opening of Le Pressoir d'Argent, the fine dining restaurant at The Regent Grand Hotel Bordeaux. The 150-room property is both the first Regent in France and the first five-star hotel in the renowned wine capital.

The menu at Le Pressoir d'Argent was created by Michelin chef Yves Mattagne, of Brussels' The Sea Grill, in conjunction with longtime collaborator Pascal Nibaudeau. Chef Nibaudeau oversees the 48-seat haute seafood restaurant. Menu items include caviar d'Aquitaine, red tuna with Les Landes duck liver, Belon oysters with Pont-Neuf potatoes and coral, and Breton blue lobsters. Sommelier Vincent Delors offers over 300 regional wines. The restaurant's cave à vins also serves as a wine shop where guests can purchase the bottles they enjoyed with meals.
 
Le Pressoir d'Argent, whose name translates to "silver press," offers a unique signature dish: the lobster press. This intricate menu item involves the restaurant's namesake silver lobster press, one of only five in the world. An elaborate gastronomic production, a choice Breton lobster is first presented live, then brought to the kitchen to be pan-cooked and served atop fresh pasta. The dish is completed in the dining room. The lobster's shell is compressed in the elegant silver press, using the lobster's essence to create a reduction to accompany the dish.
 
World-renowned Jacques Garcia, who designed the hotel interiors as well as those of Paris' L'Hôtel and Jean-Georges Vongerichten's Spice Market in New York, used the restaurant's seafood-centric menu as inspiration for its design. Garcia's vision for Le Pressoir d'Argent includes breathtaking mosaic flooring made entirely from tiny shells, and framed black and white underwater photographs by Pierre-Yves Hervy Valliant. The restaurant's accompanying lounge bar features a glass roof surrounded by pink marble columns, and plush red armchairs for intimate gathering.
 
The Regent Grand Hotel Bordeaux also offers chic, casual eateries Brasserie L'Europe and L'Orangerie, as well as trendy nightclub Black Diamond. Additional property features include Fashion Avenue, a luxury gallery located within the hotel, and Les Bains de Léa Spa, a 10,000-square-foot spa opening later this year.
 
The hotel is located in an historic building in the city's Golden Triangle. The hotel features 128 rooms and 22 suites, including eight Prestige Suites that offer in-suite wine bars, private sommelier service and a customized list of bottles.
 
To celebrate the opening of Le Pressoir d'Argent, The Regent Grand Hotel Bordeaux is offering the "Gourmet Treasure" luxury package. Sure to delight all epicurean travellers, the offer includes:
