Exclusive Feature: Last week I had the pleasure of attending my favorite hotel investment conference in Berlin, the 2025 IHIF EMEA .
Like in years before, I will write my own impressions in write-up which will soon follow and in the meantime I would like introducing you to one of my oldest friends in the lodging industry Mr. Zeev Rosenberg (below, right).
Since November 2024, Zeèv has been at the helm of SO/ Berlin Das Stue – one of the most distinctive five-star hotels in the German capital.
With a sharp sense for design, hospitality, and team leadership, the experienced hotelier brings fresh ideas and new momentum to this iconic property. In this interview, he talks about his first strategic steps, the charm of the building, his culinary direction, and why Das Stue is much more than just a workplace for him.
Zeèv, you took over as General Manager of SO/ Berlin Das Stue in November 2024. What attracted you most to this position?
Das Stue is a very special property – not just because of its location or five-star De Luxe status, but because of its “aura”. It exudes a sense of calm and exclusivity that is rare in Berlin. The blend of historic architecture A landmark building designed by a famous Architect - Johann Emil Schaft, contemporary design, proximity to the Tiergarten, and direct private access to the Berlin Zoo makes it truly unique. For me, it was a one-of-a-kind opportunity to develop a hotel with such a rich story and to shape its future with my own vision.
What does it mean to you personally to lead this particular hotel – did you have a previous connection to Das Stue?
Absolutely. Das Stue has always been my favorite hotel in Berlin – long before I ever worked here. For me, it’s not just an honor to lead one of the most beautiful hotels in the city – if not the most beautiful one.The hotel is an historical building an architectural landmark designed by the same architect who designed the famous KaDeWe world renowned department store on Berlin’s Ku’damm avenue . For me, managing this hotel is a truly meaningful professional responsibility, and a personal dream come true. This property embodies so many of the values I believe in as a host: individuality, aesthetics, quality – and above all, character.
In your opinion, what sets SO/ Berlin Das Stue apart from other Uber Luxury hotels in the city?
It’s the combination of boutique character, luxurious privacy, and a very personal approach to service. The rooms are not only spacious – they are true retreats for guests who value discreet luxury and tranquility. The design is refined and expressive, without being overwhelming. And, of course, the direct access to the zoo is a unique feature not found anywhere else in Germany.
Since 2017, the hotel has been part of the Accor Group, one of the world’s leading hospitality companies. For the past three years, it has also been part of Ennismore, a collective of lifestyle and experience-driven hotel brands under the Accor umbrella. Brands such as 25hours, The Hoxton, and Mama Shelter are also part of Ennismore and continue to be bookable and operated within the broader Accor system. This affiliation allows us to benefit from global reach and innovation, while maintaining the individuality and spirit that make Das Stue so unique.
You’ve held leadership roles in several Berlin hotels. What were the first changes you made after taking over at Das Stue?
My goal was to bring new energy into the hotel. We started with a complete reorientation of our culinary offering. Since April, Carte Blanche has been serving authentic, down-to-earth French cuisine with seasonal ingredients and a clearly defined concept. We also launched the Carte Blanche Salon, a private dining space for bespoke gastronomic experiences. In parallel, we refreshed several rooms, made some subtle structural changes, and redefined some roles within the team. The idea was to bring fresh impulses without losing the hotel’s unique character.
You’ve placed a strong focus on the culinary concept. Why did you choose French cuisine?
French cuisine stands for precision, elegance, and authenticity – values that align perfectly with our hotel. After previous concepts centered around Spanish, Mediterranean, and Italian influences, it was time for something that’s both rooted in tradition and internationally appreciated. Guest feedback confirms that we’ve made the right choice.
The hotel features two meeting rooms and event space for up to 500 people. How important is the MICE segment for you?
It’s an important part of our offering, but with a clear focus on quality. We don’t provide generic conference services. Instead, we specialize in curated formats with style and character. Whether it’s an exclusive corporate event, private dinner, or creative workshop – we see ourselves as hosts for special moments where atmosphere and service make the difference.
You’ve described the spa area as a boutique oasis. How does it fit into the overall hotel experience?
The spa is an essential part of what we offer. With a pool, sauna, and treatment areas, it delivers the level of relaxation our guests expect from a five-star property – but in an intimate, calming setting. We don’t aim to create a wellness spectacle, but a genuine place to unwind. It’s perfectly in tune with the hotel’s scale and spirit.
You’ve emphasized the importance of the team. How would you describe your leadership style?
I believe in open, honest communication, in trust and appreciation. Our team is made up of experienced, creative individuals who understand this house, identify with it, and actively shape it. My job is to give them the right framework – to empower them to act with joy and with responsibility. That’s how we create a culture that guests can truly feel.
Your rooms range from 32 to 220 square meters – quite a luxurious offering. How important is privacy in that context?
It’s extremely important. Many of our guests come to us specifically because they’re looking for a high degree of privacy. This is not about being seen – it’s about serenity, quality, and an urban retreat. Each room is designed to make guests feel instantly at ease – with understated luxury. For me, that’s what modern luxury means: not grandeur, but refinement.
Looking ahead, what are your mid- and long-term goals for the hotel?
Together with the ownership group, we’re working to position SO/ Berlin Das Stue as the defining boutique luxury hotel in Berlin. It’s not about reinventing everything – it’s about refining what’s already here, evolving it, and preparing it for the future. This property has the potential to once again become a landmark in Berlin’s hotel scene – and we’re committed to making that happen with passion and precision.
