Cheryl Forberg, RD, one of the nation's leading authorities on nutrition, a James Beard award-winning chef, and nutritionist for NBC's The Biggest Loser, has joined Omni Hotels & Resorts culinary team as the luxury hotel brand's in-house nutritionist.
From Omni's award winning restaurants to in-room dining, Forberg will work closely with Omni chefs to create both delicious and nutritious menu choices.
We caught up with Cheryl to talk about her passion for nutrition, her experience on The Biggest Loser, travel tips, food trends and much more!
Q: Can you tell us about what first sparked your interest in nutrition?A: After culinary school, I worked as a private chef for several years, cooking for clients with dietary restrictions. At the time, there were few chefs that were educated about nutrition and few nutritionists who had chef training. At the intersection of these two realizations, I knew I wanted to go back to school to become a registered dietitian.
Q: What was your first culinary-related job?A: I worked in a gourmet take-out shop while attending culinary school at the California Culinary Academy (CCA) in San Francisco.
Q: You have spent a lot of time traveling the world. Can you take us through a geographical snapshot of your life?A: Before I became interested in culinary school, I was an international flight attendant for Pan Am. I spent several years traveling the world – from India to Thailand. My time abroad was really a culinary awakening for me; my palate was experiencing flavors and cultures that I had never known before. I eventually moved to San Francisco to attend the CCA. During culinary school, I won an apprenticeship in France and immediately moved to Europe for six months. Eventually, I moved back to San Francisco, cooked for Wolfgang Puck, George Lucas and even a Saudi prince.
