Old-school carts are back and rolling up to a table near you at restaurants all around the city;
Waiters are bringing out dim sum-style offerings, tableside preparations like Caesar salad, old-school dessert carts and more. Check out eight eateries reviving the trend through the link below.
Tableside Caesar salad cart at Carbone
Carbone's entire concept is an homage to the fancy red-sauce joints of the '50s and '60s, so it's no surprise that they offer this $22 "Caesar Alla ZZ" that's prepared tableside by a waiter clad in a red-velvet jacket and bow tie.
The process begins with the Caesar base dressing, which goes in the bowl first, then Pecorino cheese, Worcestershire sauce, black pepper, a pinch of Maldon sea salt and a drop of extra virgin olive oil are added.
Once that is mixed up, crisp leaves of romaine are tossed in, plated and garnished with red anchovies and white anchovies, garlic croutons, and ricotta salata.
